Description
WHY MAKE ROSE WATER?
Like orange blossom water, rose water is a Proustian madeleine for many. It evokes memories of a simpler time.Rose water was used in cosmetics, to flavor desserts, and more.
And at Terroir-06, it is this traditional, time-honored rose water that we have chosen to produce from the centifolia rose. It seduces with its color, its smell, has many uses and adapts wonderfully to our clay-limestone soils and our Mediterranean climate. It requires little water and grows quickly, and tastes wonderfully with bitter orange, our traditional crop.
CULTURE OF THE CENTIFOLIA ROSE
This is the centifolia rose (Rosa x centifolia). In the Grasse region, roses grafted onto Rosa indica rootstock, better suited to the Mediterranean climate, are traditionally preferred. We bought our organic plants from a fellow farmer, and now we take our own cuttings. Planted in the ground between November and January and watered, the roses are weeded by hand and fertilized with organic fertilizer. The highlight will be May, when the freshly opened roses will be harvested every morning for almost a month.
ROSE WATER PRODUCTION
Here, there are no chemicals or polluting processes. We distill our rose water in the most traditional way possible: hydro-distillation. Our freshly picked roses are immersed in water, which is then brought to a boil. The resulting steam, laden with fragrant molecules, passes through a water-cooled coil to condense and produce our renowned rose water. But the work isn’t finished, as our rose water will now rest for two months in a place protected from light and extreme temperature fluctuations. During this time, it will mature, the aromas will settle, resulting in a highly aromatic and high-quality water.
