The olive tree is part of our everyday landscape and our grandmothers and mothers have always cooked with this oil, whose many virtues are recognized throughout the world.
So we also wanted to make our own olive oil from our trees to eat more together.
OLIVE TREE CULTIVATION
The typical olive tree of the Pays de Grasse and the Alpes-Maritimes is the cailletier, also called the weeping olive tree because its productive branches are hanging (the pandoulliers). It produces a fruity oil full of character.
On the plots that we farm organically, we have many large trees, some more than a hundred years old, as well as an olive grove replanted about twenty years ago. The olive tree is a Mediterranean tree that does not hold grudges, so we water our trees very little. On the other hand, we fertilize them, we treat them against pests and diseases with natural means (trapping and pulverized clay), we hoe them and prune them after the harvest which takes place in winter.
HARVESTING OLIVES AND PRODUCING OIL
The olive harvest extends from November to March. In the orchards, large nets are spread out and regularly visited to collect the olives as they ripen. Then, depending on the weather conditions or the type of oil desired, the olives are beaten and immediately taken to the mill to obtain olive oil, a true liquid gold.
At the beginning of the season, the oil obtained will be a beautiful green and have a slightly astringent flavor with notes of almond and artichoke. As the season progresses, the oil will become milder but will always retain a slight note of artichoke.
It is the typical oil of the Côte d’Azur region which has been produced for centuries.
USES OF OLIVE OIL
To season and enhance the flavor or put in a sauce or mayonnaise.
Essential to Mediterranean cuisine, olive oil is certainly the first beauty product to exist: on the skin to soften it, hair as a mask it strengthens the hair. It can even be used as a makeup remover according to Soline Gayet. Solar macerates can also be made.
